Beet & Blueberry Caprese Salad

Three cheers for this red, white, and blueberry salad. A colorful and refreshing side dish to lighten up your July 4th meal.
- 1 (12 oz.) package Green Giant Veggie Spirals™ Beets, cooked according to package directions and cooled.
- 1/4 cup balsamic dressing or glaze, divided
- 8 ounces fresh mozzarella, sliced
- 1 cup blueberries
- 1 Toss Green Giant Veggie Spirals™ Beets with 2 tablespoons balsamic dressing.
- 2 Arrange Beet Spirals on serving platter. Arrange sliced mozzarella over beets, then top with blueberries.
- 3 To serve, drizzle with remaining dressing.
