Breakfast Pizza on a Cauliflower Pizza Crust

  • 1 Green Giant Cauliflower Pizza Crust - Original
  • 1 tablespoon olive oil
  • 4 ounces Cajun chicken sausage or your favorite chicken sausage, coarsely chopped
  • 1 small onion, chopped
  • 1 (12 oz.) package Green Giant® Riced Butternut Squash
  • 1 small red bell pepper, chopped
  • 2 cups chopped fresh baby spinach or kale (optional)
  • 4 eggs, fried or poached

    Preheat oven to 425°F. Place Green Giant Cauliflower Pizza Crust on baking sheet and bake 16 minutes or until crisp.

    Meanwhile, heat olive oil in large nonstick skillet over medium-high heat and cook sausage and onion 4 minutes or until beginning to brown. Stir in Green Giant® Riced Butternut Squash and red pepper cook 5 minutes, stirring occasionally, or until vegetables are tender. Stir in spinach and cook 1 minute or until just wilted. Season to taste with salt and pepper.

    Remove crust from oven and cut into 4 squares. Place about ½ cup squash mixture over each square and top with egg.
