Cauliflower Veggie Hash Brown Pizzas

Pizza in any form is a great idea. In this low-carb version, we used Cauliflower Veggie Hash Browns from Green Giant® as the crust. For the toppings, we kept things simple with fresh tomatoes and basil.

Directions

  1. Preheat oven to 425º.

  2. Combine whole basil leaves and stems, chili flakes, and salt in a heat safe bowl.

  3. Gently mash the basil with a wooden spoon to help release its oils, add the tomatoes and set aside.

  4. Place oil and garlic in a small heavy bottomed saucepan, heat on low for 8-10 minutes. As it heats you will see it bubble and cook the garlic, be careful not to brown or burn the garlic. Carefully pour oil and garlic over the prepared tomatoes, stir gently, and leave to marinate while the cauliflower hash browns toast.

  5. Place cauliflower hash browns on a sheet pan prepped with cooking spray. Cook in the preheated oven for 15 min. Carefully flip the cauliflower hash browns and return to oven to cook for 10 min. Remove pan from oven and place cheese on each cauliflower hash brown.

  6. Remove the whole basil from the marinated tomatoes, then spoon tomatoes and garlic oil on top of each cauliflower hash brown, return pan to oven, and cook for 4-5 minutes more until the cheese is melted.

  7. Garnish with the fresh chopped basil before serving.
