Chicken Mole on a Cauliflower Pizza Crust
1 Green Giant™ Cauliflower Pizza Crust - Original
3/4 cup prepared mole sauce
2 cups shredded chicken
1/2 cup shredded Monterey Jack cheese
1/4 cup crumbled queso fresco
- chopped red onion, sliced avocado and cilantro leaves for garnish
Preheat oven to 425°F. Place Green Giant™ Cauliflower Pizza Crust on baking sheet and bake 15 minutes.
Meanwhile, heat mole sauce in small saucepan until warm and stir in chicken until evenly coated.
Remove crust from oven; spread chicken mixture evenly over crust then top with cheese.
Bake 6 minutes or until cheese is melted. Top with queso fresco, red onion and cilantro.
