Corned Beef, Cauliflower & Sweet Potato Hash

Start your morning on the right foot with Corned Beef Breakfast Hash. Quick recipe made from leftover corned beef perfect for St. Patrick’s day, or any day of the year. Add more veggies in place of potatoes with your favorite variety of Green Giant® Riced Veggies.
- 2 tablespoons olive oil
- 1 small onion, chopped
1/2 pound corned beef, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon mustard (optional)
- 4 eggs, fried or poached
Heat olive oil in large nonstick skillet over medium-high heat and cook onion 3 minutes or until softened. Add corned beef, green pepper and garlic and cook 2 minutes.
- 2 Stir in Riced Veggies and mustard and cook 5 minutes, stirring occasionally, or until hot. Serve eggs over hash.
