Eggplant Parmesan on a Cauliflower Pizza Crust

1 Green Giant™ Cauliflower Pizza Crust - Tuscan
- 1 tablespoon olive oil
- 2 cups chopped eggplant
1 clove garlic, minced
- 1/4 cup Mama Mary’s ™ Pizza Sauce
1/2 cup shredded mozzarella cheese 2 tablespoons grated Parmesan cheese
- Fresh chopped basil
Preheat oven to 425°F. Place Green Giant™ Cauliflower Pizza Crust on baking sheet and bake 15 minutes.
Meanwhile, heat olive oil in large nonstick skillet over medium-high heat and cook eggplant and garlic 6 minutes or until softened. Season with salt.
Remove crust from oven; spread Pizza Sauce evenly over crust then top with eggplant and cheeses.
Bake 6 minutes or until cheese is melted. Sprinkle with basil.
