Directions

  1. Heat olive oil in large nonstick skillet over medium heat.

  2. Add Green Giant® Riced Veggies Butternut Squash and dates and cook 5 minutes or until vegetables are heated through, stirring occasionally.

  3. Stir in pecans and mint and season to taste with salt and pepper.

Tip: You can prep the dates, mint and pecans one day ahead. This also works great with Green Giant™ Veggies Spirals Butternut Squash. Simply increase the first cook time to 8 minutes, and stir frequently to break up the spirals.
