Green Giant® Riced Veggies Butternut Squash & Dates
- 1 tablespoon olive oil
- 1 (10 oz.) package Green Giant® Riced Veggies Butternut Squash
- ½ cup chopped dates
- ½ cup chopped pecans, toasted
- 2 tablespoons chopped fresh mint
- 1 Heat olive oil in large nonstick skillet over medium heat.
- 2 Add Green Giant® Riced Veggies Butternut Squash and dates and cook 5 minutes or until vegetables are heated through, stirring occasionally.
- 3 Stir in pecans and mint and season to taste with salt and pepper.
You can prep the dates, mint and pecans one day ahead. This also works great with Green Giant™ Veggies Spirals Butternut Squash. Simply increase the first cook time to 8 minutes, and stir frequently to break up the spirals.
