Not Your Grandma’s Rice Pudding

Creamy, sweet, and decadent dessert. But we added some veggies. It’s called balance.

Directions

  1.  In medium saucepan, bring milk, Green Giant® Riced Veggies Chickpea Cauliflower Blend and salt to a boil over medium heat, stirring frequently. Reduce heat to low and simmer 9 minutes, or until the rice is tender. Stir frequently to prevent the rice from sticking to the bottom of the pan.
  2. Lightly beat eggs with sugar. Stir ½ cup rice mixture into egg mixture, 1 tablespoon at a time, stirring well after each addition. Do not add all at once or eggs will cook.
  3. Slowly add tempered egg mixture back into rice mixture, stirrng constantly. Cook over low heat, stirring constantly until mixture thickens slightly, about 3 to 5 minutes. Do not boil or mixture will curdle.
  4. Remove from heat and stir in vanilla and cinnamon. Sprinkle with cinnamon if desired.
