Skillet Corn & Zucchini

Roasting the corn brings out its natural sweetness, making it the perfect partner for mild zucchini. Fresh garlic and basil bring this dish together for a side dish that’s easy, healthy and delicious.
- 2 tablespoons olive oil
- 1 (10-ounce) package Green Giant® Roasted Corn
- 1 large zucchini, coarsely chopped (about 2 cups)
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 2 tablespoons fresh chopped basil
- 1 Heat olive oil over medium heat in large nonstick skillet. Add Green Giant® Roasted Corn, zucchini and garlic and cook 8 minutes, stirring occasionally, or until vegetables are tender. Stir in basil.
