Summer Riced Cauliflower Salad

This salad screams summer! This quick and refreshing salad is great as a side dish. Or, top it with a grilled protein for a delicious main.

Ingredients

  • 1 Combine Riced Cauliflower, Green Giant Corn, tomatoes, zucchini and red onion in a large bowl.
  • 2 Stir in remaining ingredients.
  • 3 Season to taste with salt and cracked black pepper.
  • 4 Serve immediately or chill until ready to use. Garnish with additional basil and sprinkle with freshly grated Parmesan cheese, if desired.
